I changed the recipe a bit, but it is amazing! I take 1 cup steel cut oats, 3 cups water and my rice cooker. I then look in my freezer for frozen fruit. I then notice a pint of ice cream... I take the steel cut oats and throw them away, convincing my wife that I ate them. I then eat the ice cream. It is amazing!

I cook the oats the night before by boiling 4 cups of water add 1 cup of oats reduce heat and cook for 1-2 minutes. Turn off heat and cover. In the morning just heat and serve. Saves lots of time.

Always intrigued when a recipe lists both unsalted butter and added salt.
Butter is salted for good reason: to delay the onset of rancidity without the need for refrigeration. So buy salted butter and keep as much as you intend to use in the next week or so at room temperature. It spreads; refrigerated butter does not. And it tastes better than refrigerated butter - a lot better. In fact, it actually tastes of butter. Imagine that!

1 cup steel oats, add 1 cup cold water and pinch of salt.
Cover overnight. No cooking
In morning add 2 cups skim milk, bring to simmer and stir frequently, in about 12 min. add handful of dried fruit and handful of chopped walnuts, heavy sprinkle of cinnamon, stir ...ready to eat.
Can be reheated as left overs adding some milk or water to soften and microwave, warmed through. 1 Tbl. Pure maple syrup an essential, too! Makes 3-4 servings

Put the oats and liquid in a slow cooker. I have a small one I purchased just for this. Add whatever dried fruit, maple syrup, spices (always a little salt), stir together and set on low before you go to bed. Your kitchen will smell delish and you will have a hot breakfast in the morning. Leftovers reheat well. Lots of recipes online if you need ideas.

I make an easy (but slow) variant of this on a regular basis:
3 cups of water
1 cup of low fat milk
1 cup of steel cut oats
1 tsp of kosher salt
1/2 tsp of cinnamon
1/4 tsp of cardamom
Lots of fruit.
Optional butter, reduces need for stirring towards the end.
Be careful about covering as boiling over is a messy risk.Stirring is rewarded. I recommend cooking on low for at least an hour. The extra 30 minutes makes a huge difference in texture with more of a creamy feel.

Another way to cook is to put 4 cups water or milk into a slow cooker. Add 1cup oats and pinch of salt. Cook on low or even the warm setting overnight.

Here is another variation. Place your oats in a heavy pan and dry roast them for 2 to 3 minutes over medium high heat until they are browning and popping. Watch that they don't burn, use a lower temperature if it is going too fast. Stir constantly or else they will burn. Then quickly add the liquid and follow the usual cooking plan. This adds a wonderful nutty flavor and color variation to the oatmeal. Much more depth without the added calories of nuts...not that I am against them!

For YEARS I have been making my steel cut oats for my husband in my slow cooker! I make 2 cups of oats, 8 cups of water and 6 peeled apples that I've done in my spiralizer! My husband LOVES his breakfast every single morning!

This recipe makes a serviceable steel-cut oatmeal. But I have found that a few slight adjustments make an outstanding one.
The oat-to-liquid ratio should be 3-to-1. You need spices, a touch more sweetness, and crunch.
For two servings: 1.5 cups almond milk (or water), 0.5 cup oats (Bob's Red Mill won a competition in Scotland with theirs), 2-3tsp brown sugar (or 1T maple syrup), 1tsp spices (mix cinnamon, ginger, nutmeg), 2T nuts. And I add a cinnamon stick while it simmers. Mmm!

My personal touch is using a rice cooker. It makes it much easier on the watching, spilling and stirring front. Set rice cooker to porridge setting. Add orange or lemon zest, vanilla extract, brown sugar, milk/water/steel cut oats in 3-1 ratio of liquid to solid and add in a healthy amount of nutmeg and cinnamon. Sea salt to taste. At the end I always top with either blueberries or strawberries and like them to get a bit runny from the heat. Yum!

Try cooking the oats for 15 minutes the night before. Leave it on the cold stove. Stir in the fruit in the morning and reheat. It will be done cooking by the time it is hot.

Yummy! I added golden raisins, chopped dried figs and chopped candied orange peel while cooking and topped with toasted walnuts. Made for a very satisfying breakfast. It came close to boiling over on the first simmer so keep an eye on it.

I soak oats in yogurt over night. Then, add hot water to desired texture along with spices, fruit (frozen or fresh) and toasted nuts. (No sticky pan to clean.) my son’s idea.

Put one cup of steel-cut oats into 4 cups of water that was brought to a boil. Bring it to a boil again and stir. Turn off and go exercise for 30-60 minutes. Return to stove and simmer another 10 - 15 minutes. Enjoy with cut up fruit.

I'm inclined not to line the ice cube tray with plastic, because I don't keep plastic wrap in my kitchen. Ok to use parchment paper? Nothing?

I left out the sweetener but used 1/2 cup of dried cherries and a small diced apple. I loved it! But, my family dumped white sugar in theirs. Looking forward to heating up leftovers for breakfast tomorrow.

I put 1 cup of steel oats in a glass bowl with two cups of water and let it sit overnight. The next morning, I boil the beautiful oats on medium-high for 15-20 minutes stirring so it doesn’t stick. After 15 minutes, I turn the heat down to low and let the oats simmer for about 10 minutes. I add a pinch of sea salt, brown sugar to taste, a dash of cinnamon, 1/3 cup of cream of coconut, 1/2 cup of papaya, and bananas. Cheers!

1. Is there any reason not to put dried fruit in at the start? They refresh (swell up? rehydrate? bloom?) better this way & their flavor pervades the oatmeal. 2. Rolled oats recipes omit milk, but everyone here recommends milk or similar. Are steel-cut oats nasty with just water? 3. I bought oatmeal that turned out to be nothing but oat bran. It turned out surprisingly good, but the proportions were a little different, so I didn't try mixing it with normal oatmeal. Does it work?

Grate the apples!Grating releases all the flavor and nutritional value of the apple plus we like the texture and way it combines with the oats.

Is dried fruit better than sugar? I do use a tsp of brown sugar. But mostly I rely on a large handful of frozen wild blueberries in my bowl of precooked steel cut oatmeal. I microwave for 2 min and find the bursting blueberries generate enough liquid to avoid milk. I add a tsp of brown sugar plus ground flaxseed, stir and top with butter because I adore it on oatmeal. Perhaps not perfectly virtuous but a happy start to the day.

Like another reader, I toast the oats first, with a generous dollop of butter. I add only about 3x the liquid (more milk than water) because I like a toothy oatmeal that's a little denser, topped with warm milk and brown sugar.
