Hello. Today we’ll be making Grilled Pound Cake Bananas Foster. I’m Chef Bil and you’re watching Publix Aprons Cooking School Online. [Music] Okay, let’s get started. One of the first things we’re going to do is we’re going to work on our simplified version of our bananas foster sauce. First thing I want to use is some good quality butter, and I’m going to put this into a hot pan so it’s going to sizzle right away. We’ll let that melt a little bit, and once this melts, we’re going to go ahead and add some brown sugar. Every time we add an ingredient to this pan, it cools the pan down a little bit. Mix in this brown sugar. Next, we’re going to add a little bit of rum extract. This is going to add that great rum flavor. Some ground cinnamon. I’m a big fan of whenever I use some seasoning, some herbs, or spices, I like to pour it into the cap.That way I get the right amount, and I’m not pouring a bunch into the pan at one time. And I’ll stir this. And since we’re not going to flambé this dish, we’re going to add some root beer to it. We’re going to let this reduce down a little bit. All right, so I’m going to go ahead and cut up our pound cake.We’re going to be grilling this pound cake, and it’s going to be the base for this bananas foster. I’m going to cut the very edges off first, and I’m going to cut this into six pieces. So I like to do math here. I’m going to cut it in half first and then that way I can get more even cuts when I cut the halves into thirds. All right. And I’ll put these onto our pan. I’m going to peel and slice up our bananas. These are just the right consistency as far as ripeness goes. So we don’t want them too ripe so that when they go into the sauce, they hold their texture. [Music] Now, I’m going to cut these into one-inch pieces. I like to do it on a little bit of a bias. All right, so these are good. I want to give this a little bit of a stir. It’s starting to thicken a little bit. I’m seeing the right size bubbles in here right now. Let that go just a little bit longer, and then we’ll get our bananas in there. I’m going to butter our pound cake. I’ve got some melted butter, and when you use good quality butter, this is just going to bring out more of that flavor. Nice coating on there. All right, now we’re going to flip these over. Get some of that butter on the other side. Perfect. Our sauce is to the point where I don’t want it getting too much darker. It’s got a great consistency. So again, to slow down that cooking process, I’m going to add a room temperature ingredient. Right now it’s going to be our bananas. We’re not really wanting to cook these so much as we’re wanting to just get them coated with that sauce. All right, you can see the bubbling kind of stopped a little bit. That’s good. And then just reduce it down a little bit more. But we’re just going to let that simmer for just a touch more. Now the fun part: That the first thing you do when you have dinner, you have your friends over, is you eat with your eyes. So we want everyone to see how good the food looks. So we’re going to go ahead and put this pound cake in. You see the lines this way? We’re going to put it in facing 10 o’clock, so I’m going to do half of these. This doesn’t take long to do. And then instead of flipping them over, we’re going to face them to 2 o’clock. Just like when we drive, we’re gonna have a 10 o’clock and 2 o’clock. So let’s see where we are here. Look at those grill marks. That’s great, but it’s not done. It’s halfway done. So we’re gonna face 2 o’clock, and let’s hope this one looks as pretty as that one. And that looks good. And then there we go. So we’ll let that go for a little while longer. So about 2 minutes per turn. There we go. [Music] All right. And at this point, we’re going to remove these so we can do our second batch. So it’s important that we don’t overcrowd the pan and that’s why I’m doing these 3 at a time. Plus, we also have to think about when we put these in the pan, we still have to allow room to turn them. [Music] And I think we’re all set here. All right, I’m gonna go grab some toppings. Be right back. [Music] Okay, now the best part, we get to taste this. So the first thing I’m going to want to do is, I want to get our grilled pound cake into our bowl. And I’m using not a high-rim bowl but medium rim bowl, because I want that sauce to stay in there too. So the next thing I want to do is get a high-quality ice cream in here. And to me, vanilla is just a great choice. [Music] All right, next what we’re gonna do take some of this bananas foster sauce, right over the top. Make sure you get some of that sauce that you’ve caramelized down and reduce a little bit.This is all about the look. And then we’re going to hit this with just a little whipped cream. And the best part is we’re going to taste this. Get everything in one bite. So food is about textures and food is about temperature. The contrast with the ice cream and the heat of the bananas foster, the sweetness of that pound cake, the texture of the pound cake. This is an amazing dish that went together super easy.
