Sadly, we don’t have Waffle House restaurants in our area. They seem to be mostly in the south central to southeastern United States but they are literally all around me. I just don’t get it because there is one about 130 miles to the south of us and there is one about 180 miles northeast of us, plus some east and west of us. It looks like they forgot us and I am wondering just who I need to talk to about this! I mean, they are to the north, south, east and west of us but somehow they forgot to put at least one here in Wichita. Baffling!

When I decided to make these eggs at home I wanted to make an easier version than theoriginal recipe. You see, I only want to dirty one pan and I want it to be the same whether I am making eggs for one or many. So I have come up with my own method to makeWaffle House eggs. There really isn’t aright wayto cook something. As long as you are happy with the end result then that is what matters.

Ingredient Notes

All you need are 3 ingredients plus salt and pepper, that’s it!

Eggs– we use large eggs for this.

Cheese– twoslices of American cheeseis what you need. This is important because American cheese gets all melty.

Butter– we like unsalted butter for this.

Salt & Pepper– use as much or as little as you like.

How to Make Our Copycat Version of Delicious Cheese Eggs

  1. Add butter to a small nonstick skillet over medium heat, when thebutter meltsplacecheese slicesinto thehot panand let melt slightly.
  2. Beat eggs in asmall bowland add to the pan on top of themelted cheese, continue cooking stirring constantly to keep the texture of the eggs smooth and creamy and to prevent overcooking.

We like our eggs to be soft scrambled, you can cook the eggs to the doneness you like. Also keep in mind that there is yummymelted cheesein there so they will be sort of wet looking.

I make this dish for one person by using 1tbsp butter, 2 slices of cheese and 2 eggs in a small skillet. We also make this for 2 – 6 people by increasing the amount of everything we use. Just remember that for every egg you need 1 slice of cheese and 1/2 tablespoon of butter and this can be made in any size frying pan.
