Ingredients

2 tbsp extra-virgin olive oil

1 yellow onion, diced

1 lb raw boneless, skinless chicken breast, cut into pieces

2 tsp chili powder

½ tsp ground cumin

¼ tsp garlic powder

½ tsp kosher salt

¼ tsp freshly-ground black pepper

8 6-inch flour tortillas

1 15-oz can low-sodium black beans, drained and rinsed

½ cup shredded cheddar cheese

Fresh cilantro, for garnish (optional)

Directions

Preheat oven to 350 degrees F. Lightly grease a 9x13-inch baking dish and set aside.

Place a large skillet over medium heat. Add olive oil and onions and cook until onions are translucent and soft, about 10 minutes. Push onions to one side and add chicken. Cook until chicken is cooked through and juices run clear, 5 to 7 minutes. Add chili powder, cumin, garlic powder, salt, and pepper and stir to coat chicken. Remove from heat.

Lay each tortilla on a clean, flat surface and top with 3 tbsp black beans, ⅓ cup chicken mixture, and 1 tbsp of cheese. Gently roll up tortilla and place in the prepared baking dish, seam side down. Repeat with remaining tortillas. Top with remaining cheese and bake until cheese is melted and the tortillas begin to brown, about 15 to 20 minutes.

1 cup whole-wheat flour

1 cup all-purpose flour

1 tsp baking soda
